We’re back with this year’s Harley Pichia a natural processed coffee that was produced exclusively for Blue Tokai using Harley Estate’s in-house fermentation technique called Pichia Fermentation. Our roasters recommend this coffee for espresso-based drinks as well as manual brews, such as the Aero Press and Pour Over.

After the coffee cherries were handpicked, they were washed in tanks and were left to ferment overnight with the Pichia yeast strain. This helped break down the acids and also to develop a unique flavour profile. After fermentation, the cherries were shifted to raised drying beds and raked continuously for even drying. The controlled fermentation and drying process gave this coffee a delicious and complex fruity flavour. Our medium roast profile? enhanced these flavour notes of sweet guava, tart pineapple and green apple.

Located in Sakleshpur, Karnataka, Harley Estate sits at an elevation of 945 – 1040m. The estate sees frequent visits by elephants and grows coffee interspersed with areca, pepper, cocoa, and cardamom. Harley has grown coffee since the 1860s and currently grows a varietal of Selection 9 Arabica.

Making refractometers essential for our cafe brewing. holding advanced sensory learnings for junior roasters, and experimenting with processing at the farm level are just some of the ways that our highly skilled team is constantly evolving the way Indian coffee is treated, experienced or communicated about.
Sourcing the best coffee beans does not guarantee good coffee.
Although we have a dedicated sourcing team for green beans and have invested in establishing quality roasting parameters, we know that a lot more steps still have to fall into place to brew a good cup. This is why we have worked hard to create coffee training centres to impart leading procedures such as equipping baristas with assessing and reporting tools for precision brewing, and cupping every single batch that is roasted to ensure consistent quality.
